St. Patrick's Day Guacamole

| 3 California Avocados |
| Juice from 1/2 lemon |
| 1/2 c. carrots, very finely diced |
| 1/4 c. red onion very finely diced |
| 1/4 jalapeño, seeded and very finely diced (optional) |
| 1 clove of garlic, crushed |
| 3 slices cooked bacon, chopped |
| 1/4 c. parsley, very finely chopped |
| 2 oz. Irish cheddar, crumbled |
| Heavy pinch of salt |
| Heavy pinch of fresh ground black pepper |
Directions:
1. In a large bowl, mash avocado with lemon juice, salt, and pepper.
2. Stir in the carrots, onion, garlic, chili, bacon, parsley, and cheese. For a beautiful presentation, leave a small portion of the mix-ins out and use them for garnish.
