St. Patrick's Day Guacamole

Ingredients
3 California Avocados
Juice from 1/2 lemon
1/2 c. carrots, very finely diced
1/4 c. red onion very finely diced
1/4 jalapeño, seeded and very finely diced (optional)
1 clove of garlic, crushed
3 slices cooked bacon, chopped
1/4 c. parsley, very finely chopped
2 oz. Irish cheddar, crumbled
Heavy pinch of salt
Heavy pinch of fresh ground black pepper

Directions:

1. In a large bowl, mash avocado with lemon juice, salt, and pepper.

2. Stir in the carrots, onion, garlic, chili, bacon, parsley, and cheese. For a beautiful presentation, leave a small portion of the mix-ins out and use them for garnish.

Serving Suggestion: Serve with fresh veggies for dipping or with tortilla chips or kettle cooked potato chips
