* 3 California Avocados
* Juice from 1/2 lemon
* 1/2 c. carrots, very finely diced
* 1/4 c. red onion very finely diced
* 1/4 jalapeņo, seeded and very finely diced (optional)
* 1 clove of garlic, crushed
* 3 slices cooked bacon, chopped
* 1/4 c. parsley, very finely chopped
* 2 oz. Irish cheddar, crumbled
* Heavy pinch of salt
* Heavy pinch of fresh ground black pepper
1. In a large bowl, mash avocado with lemon juice, salt, and pepper.
2. Stir in the carrots, onion, garlic, chili, bacon, parsley, and cheese. For a beautiful presentation, leave a small portion of the mix-ins out and use them for garnish.
